The Details
From one of Anjou's great modern purveyors of zero/zero beauties, this is Jérôme's new Grolleau-based cuvée. Old-vines over loam, hand-harvested, the grapes macerate for 5 days prior to pressing to neutral barrel. Spontaneous fermentation and a 6-9 month élevage is followed by bottling unfined, unfiltered, no additional SO2.
