The Details

36% Folle Blanche, 36% Pinot Noir, 31% Chardonnay from biodynamically farmed vines in Muscadet. Grapes are hand-harvested from 30-40 year-old vines. Directly whole-bunch pneumatically pressed to vat for spontaneous fermentation. Bottled for secondary fermentation with a small liqueur d'expedition (traditional method). Disgorged, unfined, unfiltered, minimal added SO2.
