The Details
From Arafo in the Valle de Güimar at high-elevation on Tenerife's southeast coast, this is 100% Listán Negro from 20-30 year-old vines planted in clay/volcanic pomace soils. Grapes are hand-harvested and 50% spontaneously ferment destemmed in stainless steel tank while 50% are whole-bunch foot-trodden in plastic fermenters prior to spontanouesly fermenting (~12 days). Wines are blended in 500L neutral oak barrel and mature for 1-2 months before bottling unfined, unfiltered, no additional SO2. 11.5% ABV
