Montbellet, Burgundy. 100% Chardonnay from 20-year-old, clay/limestone-rooted vines in the commune of Montbellet in Saône-et-Loire. The grapes are partially destemmed, whole bunches left on top, with 6-10 days of maceration before pressing. Fermentation finishes in barrel and ages for 9 months. Zero/zero.
