The Details
After years of working for Domaine Derain, Dominique helped Julien Altaber acquire certain parcels of interesting varieties (Aligoté, Gamay, etc.) from truly organic farmers throughout Burgundy. All of this has led to the present situation which, upon Dominique’s recent ‘retirement’ from winegrowing, Domaine Derain has become a joint production from Julien Altaber and the Derains. In addition to this, Julien’s own imprint has, year after year, expanded its range of delicious, experimental Burgundian
100% Pinot Gris. Grapes are hand-harvested, half of which are destemmed, followed by 12 days of maceration with the skins in fiberglass. Fermented with native yeasts and bottled unfined, unfiltered with no SO2.
