Biodynamic Chablis! Farmed biodynamically since 1998, this bottling is sourced from a single holding of 11 hectares on a hillside next to Préhy, a slope whose bedrock is the famed kimmeridgian marl. 30 year-old vines grown on limestone/clay/fossils. Grapes hand harvested, directly pressed, the wine spontaneously ferments and ages in large foudres for 10 months prior to being bottled unfined, unfiltered, minimal SO2 at bottling. 12.5%ABV
