The Details
100% Riesling from a gorgeous organic vineyard in (aptly named) Eden Valley, South Australia. Directly pressed, grapes are allowed to chill down before spontaneous fermentation in stainless steel. Racked, coarsely filtered and bottled unfined with a miniscule (sub 30ppm) SO2 addition at bottling.

This wine is all about minerality, citrus and tension and texture… A bit like a swim in the ocean when you’re seriously hungover. Or a hot towel on an airplane… only in reverse.
