The Details
From the Clare Valley just north of Adelaide in South Australia, this is a skin-macerated expression of Pigato, a pink-speckled strain of Vermentino whose original home are the slopes that dot the Ligurian coastline of northwestern Italy. Grapes are hand-harvested and 50% destemmed 50% whole-berry spontaneous fermentation / maceration for 20 days prior to pressing takes place all in stainless steel. Élevage also in stainless for a further year or so before bottling unfined, unfiltered, minimal (<20ppm) added SO2.
