This is joy in a bottle from one of our absolute favorite producers, Alexander and Maria Koppitsch whose vines cover 6 hectares in Neusiedl am See, Burgenland, Austria.
Tasting Notes: A regular rosé favorite at Thirst. A zero SO2 juicy jam that takes you across lakes and under pine trees and skies studded with possibility. It would be only a slight misnomer to call this wine the fountain of youth. Summer love and easy freedom.
Vinification: A blend of Zweigelt, Sankt Laurent, Blaufränkisch, Pinot Noir, and Syrah, the grapes are hand harvested from 25 year-old vines grown in soils made up of clay, sand and limestone. The grapes are - in whole bunches - thrown into a screw press and thereafter spontaneous fermentation takes place with only the help of native yeasts in stainless steel. This is a supra-varietal co-fermentation. The juice then ages for 6 months on its gross lees. Unfined, unfiltered, with a touch of SO2 (15 mg/L) at bottling.

The story of Koppitsch is nearly 500 years of natural winemaking in the beautiful hills and lake shores of Neusiedl in Austria's Burgenland, where 6 hectares of family tradition, the inspiration of Rudolf Steiner’s biodynamics, and hand-crafted motto makes up this domaine. The soils are limestone and clay; nothing is added or taken away from the land or the wine.
