The Details
From Humberto Toscano who works in his hometown of San Antonio de Las Minas at the southern end of the Guadalupe Valley, Baja Mexico's "Wine Route."
This is a rosado from the gnarly old vines of País and Palomino that grow over his family's 3 hectares of vineyard land. 75% Mission (País), 25% Palomino. The red grapes are destemmed and spontaneously ferment and age in netural barrel before blending with the (resulting of directly-pressed grapes) Palomino juice that spontaneously fermented and aged in tinaja. Blended, bottled unfined, unfiltered, no additional SO2.
