This is traditionally a cuvée done in the old 'clairet' style light-red often given a bit of zip and aromatics from a certain % of white wine blended on bottling; however, this year it is purely Pinot Noir and Gamay that carries a definitively ethereal aspect in its lightness (despite the absence of any % of white wine). From Gregoire Perron of La Combe aux Rêves who farms 2.5 hectares of vines in Journans, Bugey, France.
Vinification: A blend of 65% Pinot Noir and 35% Gamay hand-harvested from vines grown in primarily jurassic limestone soils. 1/3 of the wine is macerated for 6 months in qvevri while the remaining 2/3 macerates for only 8 days before a 6-month élevage in 225L oak barrel. Bottled unfined, unfiltered with no additional SO2. 12.5%ABV
