The Details
This is a beautiful, cherry-red rosé sparkler that has a very supple impression of high-one red-fruit in the palate with minimal residual sugar, making it an indulgent delicious pet-nat rather than a mid-day quaffer. From Gregoire Perron who tends 2.5 hectares of vines in Journans, Bugey, France.
Vinification: A blend of 75% Gamay and 25% Mondeuse Noire hand-harvested from vines grown in primarily jurassic limestone soils. A relatively short maceration and élevage take place before being bottled in the ancestral method -- fermentation finishing under crown-cap -- unfined, unfiltered, no additional SO2. 11.5% ABV
