The Details

100% Riesling, sourced as part of a grape-exchange with Alsatian Winemaker Philippe Brand (Domaine Brand et Fils). Grapes are hand-harvested, macerate for 8 days and begin spontaneous fermentation prior to bottling unfined, unfiltered, no additional SO2. Finishes primary spontaneous fermentation under crown cap a la ancestral method (pet nat) to dryness. The wine was disgorged in late 2023 after one year of élevage in bottle.
