The Details
This is a superbly refreshing pet-nat from Jérome Galalup of La Ferme du Vert who works a seven hectares of vines that have been biodynamically cultivated for twenty years in Gaillac, Southwest France.
Lively and dry with pearly, a touch nutty on the finish with fuzzy peach and salted melon notes on the nose.
Vinification: 100% Mauzac Vert spontaneously fermented & bottled prior to fermentation's completion resulting in captured bubbles a la ancestral method (pét-nat).
Jérôme works alongside his father in 7 hectares of vines that have been biodynamic for over 20 years. The vines of the "Green Farm" (La Ferme du Vert) are planted in four parcels, all with southern facing exposure, grown in terrasses organized within an amphitheater, atop clay-limestone soil.
