This is named after the orange butterfly commonly known as “The Great Spangled Fritillary” whose genus/species is Speyeria Cybele. An aged, Champagne Method sparkler with a long, deep maceration. Rarity upon rarity in 750mL from Deirdre Heekin and Caleb Barber of La Garagista, working with a couple hectares of vines in south-central Vermont.
Vinification: 100% La Crescent (a hybrid descendant of Muscat de Hambourg) hand-harvested from vines grown in clay and limestone soils. The grapes undergo spontaneous fermentation with ambient yeasts (no temp. control) and macerate for an extended period of time before pressing and élevage, a traditional second-fermentation occurring in-bottle. Unfined, unfiltered, with no additional SO2. 12.5%ABV
