The Details

Organically cultivated from the Côteaux du Layon in the western part of the Loire Valley, this is a sparkling rosé comprised of 85% Grolleau, 15% Cabernet Franc planted to sandy clay soils. Grapes are hand-harvested, directly pressed and age for 6 months sur lattes after spontaneous fermentation in stainless steel. Unfined, unfiltered, minimal added SO2.
