The Details

100% Pineau d'Aunis from a combination of vineyards in Bueil-en-Touraine and Dissay-sous-Courcillon whose ages range from 4 years-old to 50 years-old. Grapes are hand-harvested and gently foot stomped to large conical oak vat for 3 week maceration and spontaneous fermentation. Pressed to 600L neutral demi-muid for 1 year élevage prior to bottling unfined, unfiltered, no additional SO2.
