The Details
A new producer for us whose first vintage was only ~4 years ago, La Maison des Saules (The House of the Willows) is comprised of a young winemaking couple with sommelier backgrounds in Valence before their separate winemaking apprenticeships with Tommy Pico & François Rousset-Martin. The wines follow-on, stylistically, from what you might imagine a fusion of these two teachers might look like - which is to say - outstanding!
From the small village of Chille - though the grapes are organically cultivated in Villeneuve-sous-Pymont in the Central Jura. These are from young vines (~15 years-old) planted to marly soils. Grapes are hand-harvested, directly pressed and spontaneously ferment and age sur lie for 12 months (topped up, ouillé) before bottling unfined, unfiltered, 20ppm SO2 at bottling.
