The Details

Old-old-vine gobelet-trained field blend of Carignan, Aramon, Cinsault, Alicante Bouschet, Œillade, Terrets Blanc et Gris, Mourvèdre, Morastel, Vermentino, Grenache, Grand Noir de la Calmette, Clairette, and Ugni Blanc - biodynamically farmed in the Languedoc's Orb Valley. Grapes are hand-harvested, macerate for 2 weeks in a millefeuille (whole bunches and destemmed alternating layers in stainless steel tank) which creates a semi-carbonic maceration/spontaneous fermentation. Pressed and aged also in tank before bottling unfined, unfiltered, no additional SO2.
