The Details

A new winemaker and mentee of Chèrouche, this is La Momoterie - from Savièse in the Valais, this is 100% biodynamically farmed Merlot. Grapes are hand-harvested and spontaneously ferment 20% whole-bunch, 80% destemmed. 20 days of maceration with regular punchdowns, the free-run and pressed juices age separately in stainless steel vats prior to blending and bottling unfined, unfiltered, no additional SO2. From a clay-dominant site in Savièse at 800m elevation in the mountains.
