The Details

From Mélissa Bazin & Romain De Moor, this is 100% Pinot Noir biodynamically farmed on a western-exposed limestone Ridge just south of Saint-Bris and west of Irancy in northern Burgundy. Grapes are hand-harvested from 34 year-old vines, and spontaneously ferment whole-cluster in neutral barrique, macerating for 25 days before pressing. Élevage also in neutral barrique --- only one barrel produced! --- for 1 year before bottling unfined, unfiltered, no additional SO2.
