The Details
From biodynamically cultivated vines in the Colli Piacentini outside Parma in Emilia-Romagna, this is 60% Barbera 40% Bonarda from older vines planted to heavy loam and brown clay soils. Grapes are hand-harvested, macerate for 3 weeks prior to pressing. Spontaneous fermentation and élevage in concrete before bottling with a bit of frozen fresh must to referment in bottle and finish frizzante. Unfined, unfiltered, no additional SO2.
