The Details

80% Macabeu, 15% Parellada, 5% Moscatel from organically farmed vines (young vineyard - planted 8 years ago). Grapes are hand-harvested, destemmed, and macerate for 5 days before pressing to stainless steel. Rested for 10 months before bottling unfined, unfiltered, no additional SO2.
