The Details
From 45-50 year-old biodynamically farmed vines in Beaujolais Villages near Brouilly, the grapes are hand-harvested from vines planted to sandy-granite soils. Chilled for 1 day with carbonic maceration in tank for 2 weeks prior to pressing. Spontaneous fermentation and aging for 6 months also in tank prior to bottling unfined, unfiltered, 10-15ppm added SO2 at bottling only.
