The Details
100% organically cultivated Pinot Gris from clay/gravel/limestone soils in Bennwihr. Grapes are hand-harvested, directly pressed to, and aged in, a combination of 600L demi-muid and 1500L foudre. Spontaneous fermentation and élevage for up to 1 year. Bottled unfined, unfiltered, minimal (<25ppm) added SO2.
