The Details

Côt & Gamay from biodynamically farmed vines on clay soils. Grapes are hand-harvested, partially destemmed & partially whole-cluster, spontaneous fermentation takes place over 1-3 weeks after some foot trodding. Pressed to barrel for 1 year élevage before bottling unfined, unfiltered, minimal (<20ppm) added SO2.
