The Details
Lovely skin-contact wine from a new producer in the Beaujolais. Grapes are négoced from friends who organically farm Chardonnay (in Bully) and Viognier (in Juliénas). Hand-harvested, and vinified separately. Half of the Chardonnay macerates for 7 days, the other half is directly pressed. All of the Viognier is directly pressed. The makeup of hte wine is 2/3 Chardo 1/3 Viognier. Old wooden click press is used. Stainless steel for spontaneous fermentation over the course of 3 weeks prior to blending and an élevage of 6 months also in tank. Bottled unfined, unfiltered, no additional SO2.
