100% Procanico only made in particularly special years. Top wine of the estate.
Only the best of the first round of picking from the producer's most prized vines are used. After a gentle crush and fermentation with wild yeasts, the grapes are pressed using an old vertical press and transferred to old wooden casks for 24 months of aging. Bottled without SO2 and bottle-aged for 10 years.
