The Details
Sangiovese, with a bit of Ciliegiolo, Cannaiolo and Vaiano. The fruit is hand-harvested, destemmed, and left to macerate with the skins for a few weeks before pressing. Fermented with wild yeasts and aged in chestnut. Unfined, unfiltered, no SO2.
Le Coste tends over 14 hectares of high-elevation vines in Lazio, around Lago di Bolsena in the town of Gradoli (Gianmarco’s childhood home).
