The Details
From the foothills of the Pyrenées in Southern France, this is mainly Lledoner Pelut (aka Hairy Grenache, a local peculiarity of Catalonia) along with Mourvèdre & Carignan. 9 days of spontaneous co-fermentation/maceration for the Lledoner Pelut & Carignan while Mourvèdre gets 10 days' maceration separately prior to pressing and blending for all. The wine rests in stainless steel for 7 months prior to being bottled unfined, unfiltered, no additional SO2. 11.5%ABV
