The Details

Chardonnay, Folle Blanche, Côt sparkler from Muscadet biodynamic practitioner Vincent Caillè. Grapes are hand-harvested from vines grown around Monnières and are directly pressed to stainless steel tank for 3-week spontaneous fermentation prior to pressing and short maturation in tank (~5 months) prior to bottling with must from same wine for secondary refermentation in bottle. Bottled unfined, coarsely filtered, disgorged, minimal (<20ppm) added SO2. 11.5% ABV
