This is a superbly refreshing pet-nat from Jérome Galalup of La Ferme du Vert who works a seven hectares of vines that have been biodynamic for twenty years in Gaillac, Southwest France.
Tasting Notes: Lively and dry with perlant elegance, this sparkler is a touch nutty on the finish with fuzzy peach and salted melon notes on the nose.
Vinification: 100% Mauzac.
Passionate with wine since elementary school, Jérôme works alongside his father in 7 hectares of vines that have been biodynamic for over 20 years. The vignes of the "Green Farm" (La Ferme du Vert) are planted in four parcels, all with southern facing exposure, grown in terrasses organized within an amphitheater, atop clay-limestone soil.
