The Details
From 2021, this is 50% Aligoté from Le Grappin's Mâcon-La Roche Vineuse vineyard and 50% directly pressed Pinot Noir from organic fruit Vin Noé cultivate in Mercurey. Blended in Spring 2022 and a prise de mousse was added (cultured house yeast & house liquor) to kickstart secondary fermentation in bottle. 18 months in bottle prior to disgorgement. 1 year post disgorgement prior to release. Unfined, unfiltered, no additional SO2.
