The Details
The Ancient Minervois... from the mother-son team behind Gimios (in the eponymous village) Marie & Pierre Lavaysse's Rouge de Causse is a glimpse into what wine from this rocky area afield southern France might've been like centuries ago. From a parcel of 160+ year-old co-planted pre-phylloxera vines, this is a co-ferment of around 15 different varieties (Carignan, Terrets in multiple hues, Grenache, Alicante, Cinsault, Aramon, Mourvèdre, etc.). Grapes are hand-harvested and whole-bunch macerate/spontanouesly ferment in stainless steel vat prior to pressing and aging for 9 months also in steel. Bottled unfined, unfiltered, no additional SO2.
