The Details
From St. Hilaire d'Ozilhan in the Gard, this is 90% Syrah & 10% Grenache from biodynamically cultivated vines in the rolled pebbly/sand/white clay vineyards of the Soulier brothers. The grapes are hand-harvested and semi-carbonically macerate in stainless steel tank. Small amounts of pristine, wildly grown, native varieties from abandoned plots in their home village are chucked into the fermenting juice, whole-bunch. Pressed and aged 10 months also in stainless. Bottled unfined, unfiltered, no additional SO2.
