About the wine

50/50 Chardonnay & Mauzac. Directly pressed Chardonnay undergoes full malolactic fermentation, meanwhile the Mauzac does not. 6 Months in concrete vat. Unfined, unfiltered, minuscule amount of SO2. 

From Roquetaillade in the Aude Valley on the outer limits of the Languedoc in the Pyrenees foothills, Genevieve and Gilles Azam have crafted this very refreshing southern French white that is racy and quite mineral driven! Really a perfect late summer white.
