The Details

100% Cabernet Franc from organically cultivated vines in Saint-Cyr-en-Bourg near Saumur Champigny. Clay/limestone soils. Grapes are hand-harvested, destemmed, macerate for 15 days prior to pressing. Spontaneous fermentation and maturation in vat prior to bottling unfined, unfiltered, no additional SO2 --- there is a dose of SO2 applied during vinification that totals <25ppm.
