The Details

Organically cultivated Chardonnay, Sauv Blanc, Colombard, Pinot Blanc, & Muscat in Mendocino on clay soils. 50 year-old vineyard. Chardonnay is macerated separately for a short period of time. Rest of the cépage is directly pressed. Spontaneous fermentation and aging all in stainless steel, 7 months sur lie before being bottled unfined, unfiltered, minimal (<20ppm) to no added SO2 depending on vintage.
