The Details

From the woodlands upland from Béziers in the small village of Quarante, this is the top-bottling of old-vine Carignan from Les Petites Mises. 100% old-vine Carignan planted on clay/limestone. Final pick of harvest, grapes are hand-harvested, manually destemmed, and spontaneously ferment/macerate for 2 months in neutral barrel prior to pressing to glass demijohn for 2 year élevage. Bottled unfined, unfiltered, no additional SO2.
