The Details
Organically cultivated Sylvaner & Pinot Gris from Christophe's neighbor in Dorlisheim. Grapes are hand-harvested from clay/limestone soils grown on 20 year-old vines and directly pressed to stainless steel for spontaneous fermentation and aging for 9 months before bottling unfined, unfiltered, minimal (10ppm) added SO2.
