The Details
100% biodynamically cultivated Pinot Gris in basaltic clay soils from the Côteaux d'Ybois. Grapes are hand-harvested, whole-cluster macerate for 15 days before pressing. Spontaneous fermented and aged for 8 months in 300 & 500L barrels. Blended at bottling. Unfined, unfiltered, no additional SO2. 12% ABV
"Coutayre" is slang in the Auvergne for Pinot Gris, ergo, "The Pinot Grises"
