The Details

100% País from 200 year-old vines in the Itata Valley of Southern Chile from the Riffo (Gustavo) family. Vines are organically cultivated on granitic/clay/loam soils, unirrigated. Grapes are hand-harvested, destemmed and macerate for 2 weeks in stainless steel. Spontaneous fermentation in steel. Pressed and rested in large Raulí beech vats (pipas) for 12 months before bottling unfined, unfiltered, no additional SO2.
