The Details

Plum Brandy distilled by Louis Roque in Souillac, Quercy in the Southwest of France. 3-varieties of plum for the base (Ente - a red plum, Mirabelle - yellow plum famous in Lorraine, & Reine-Claude - a more common green plum). Double-distilled on a bain-marie style copper pot still prior to being aged 4-5 years in 400L oak cask, gradually reduced to bottling proof with water. No chaptalization. 42%ABV
