The Details

100% Pinot Gris organically cultivated in the Totness Vineyard in Basket Range, Australia. Grapes are hand-harvested from black sandy soils over petrified schist. Destemmed and cold-soaked for 4 days prior to pressing. Spontaneous fermentation in tank prior to bottling with some fermentation still to go to get to dryness (a la ancestral method). Disgorged after 5 months sur lattes. Unfined, unfiltered, no additional SO2.
