A declassified rarity - Klevener de Heiligenstein - this is Alsatian Savagnin Rose (pink-skinned Savagnin that is an ancient ancestor also of Gewurztraminer though much more acidic) from organically cultivated vines planted in clay/limestone soils. Hand-harvested, the grapes are directly, pneumatically pressed. Spontaneously fermented and aged in a combination of neutral barrel (90%) & glass demijohn (10%). The wine is bottled unfined, unfiltered, no additional SO2. 13%ABV
