Makatzak, "Harri Ta Zur" 2022

From the Sorgintxulo parcel in the town of Aia on the Basque coast of northern Spain, this remarkable wine is 90% Hondarrabi Zuri & 10% Hondarrabi Zuri Zerratia from biodynamically farmed vines on a steep slope at 300m elevation and facing south. Grapes are hand-harvested, directly pressed to stainless steel for spontaneous fermentation where, after several days, the juices are transferred to 225L neutral oak barrel to finish fermentation. The wine rests sur lie for 10 months in these barrels with periodic stirring. Bottled unfined, unfiltered, no additional SO2. Rested in bottle for another year before release.
