Makatzak, "Narrasti" 2022

From the Sorgintxulo parcel in the town of Aia on the Basque coast of northern Spain, this remarkable wine is 90% Hondarrabi Zuri & 10% Hondarrabi Zuri Zerratia. Grapes are hand-harvested from biodynamically cultivated vines and 30% of the grapes are destemmed and macerate for 3 weeks while 70% of the grapes are directly pressed. The macerated portion ages in a combination of neutral barrique and tinaja while the directly pressed juice ages in stainless steel sur lie. All for 11 months before blending and resting for a month before bottling unfined, unfiltered, minimal (<10ppm) added SO2.
