The Details

From the Sorgintxulo parcel in the town of Aia on the Basque coast of northern Spain, this remarkable wine is monovarietal Hondarrabi Zuri from biodynamically farmed, won-rooted vines. Grapes are hand-harvested, destemmed, and directly pressed to stainless steel tank for 36 hours of cold settling before spontaneous fermentation begins in tank. The wine then is raised sur lie also in tank for 16 months sans bâttonage. Bottled unfined, unfiltered, no additional SO2.
