The Details
100% organically cultivated Chardonnay from several south-facing parcels planted to liassic Marl and Bajocian Limestone scree soils at 390m elevation. Grapes are hand-harvested and whole-cluster pressed upon arrival at the cellar. A small dose of SO2 is applied at crush. Racking off the gross lees after one night of settling, the juice spontaneously ferments in neutral oak foudres and demi-muids. Aging for 18 months also in neutral barrels. One month before bottling a second small dose of SO2 is added (total added is <35ppm over the 2 though much less on analysis because of what is absorbed/churned up during fermentation). Bottled thereafter unfined, unfiltered, no additional SO2.
