The Details
Vinification: 100% organic and biodynamic Pinot Grigio from Veneto. Grapes are hand-harvested, followed by fermentation with native yeasts and 3 days on the skins in cement tank. The second fermentation is kick-started by the addition of Senese must, a native varietal of Veneto. Undisgorged, unfined, unfiltered, with no SO2.
Tasting: A funky little pet nat from Veneto. Citrus and rosemary on the nose, dried apricots and stone fruits on the palate, all mingling with a sly peppery spice on the backend.
